This is a hearty quesadilla with creamy avocado and chopped smoked bacon. Morning, noon or night, this quesadilla will satisfy your taste buds. Serve with your favorite dipping sauce or salsa.
Heat a double burner griddle pan or large sauté pan on medium heat, once the pan is heated, add the tortilla, lightly toasting both sides. Sprinkle the cheese evenly on your tortilla, then add the chopped bacon on one half of the tortilla. Arrange the avocado slices on top of the bacon. Fold over the top half of the tortilla, lightly pressing down on the quesadilla. Heat until cheese is melted and the tortilla is toasted on both sides.
I like to spread a light layer of butter on each side of the quesadilla and toast until the tortilla is golden and crispy.”
