Cilantro-Lime Rice

I love the simple combination of the zesty lime and the floral cilantro. This rice is a great side to many dishes. Make this rice when making a veggie bowl or as a side to grilled fish tacos!


In a medium saucepan bring 4 cups of water, 2 tsp. olive oil, and 1/2 tsp. sea salt to a boil. Add rice, stir, and lower heat to simmer and cover. After 20 minutes, remove the saucepan from the heat, let stand covered for 5 minutes, and fluff rice with a fork and place in a large bowl. Add 2 tbs. olive oil, lime juice, 1½ tsp. sea salt, and cilantro to the rice. Fold ingredients until well incorporated.
