Crispy and festive, these wontons are fun to make and even more fun to eat! Dip these southwestern tasting crunchy pockets into a creamy, smoky, tangy sauce. Perfect combination!
Chipotle-Lime Dipping Sauce: Add all ingredients in a bowl and whisk to combine. Cover and place in the fridge.
Add beans to food processor and pulse several times until beans are broken down and become a chunky paste. Set aside.
In a large pan over medium heat add the oil, onions, bell peppers, garlic, salt, cumin and chili powder- stirring often. Once onions start becoming transparent add the cilantro and beans and work the beans into the vegetable mixture adding a tsp. of water or oil if needed to help fully combine beans with veg. mix. Bean mixture should have a thick pliable consistency, perfect for a filling. Once beans are heated through, turn heat off and scoop bean mixture into a bowl. Set aside.
Separate wonton wrappers and set out several at a time on a flat surface. I place them creating a diamond shape. Fill a small bowl of water next to your work area. Scoop a heaping teaspoon of bean mixture and place in center of wonton wrapper. Wet two sides of the wonton edges, think “V” with your finger tip. Fold over one side of the wrapper to meet the other side, pressing the edges together, also gently pressing out any air pockets around the filling. Press edges to seal and place on a plate and continue process until completed.
Line a plate with a couple of paper towels to help absorb excess oil when wontons are removed from oil.
In a medium sized pan, add about ½ inch of vegetable or canola oil and heat over medium heat. Once oil is heated, add 4 (or more) wontons at a time, flipping once edges of the bottom side start becoming a light golden brown (this happens quickly once oil is heated just right). Remove wontons from oil once both sides are golden brown and crispy.
Serve these wontons with a side of chipotle-lime dipping sauce!
Makes: approximately 30-35
Time-Saver: These wontons can be made ahead of time. Simply make and place on a baking sheet and place in the freezer.
