• 10 slices of applewood smoked bacon
  • 4 slices sourdough bread
  • 1 tbs. mayonnaise or vegenaisse
  • 2 oz. cream cheese, at room temperature
  • 1 tbs. butter or earth’s balance butter spread
  • 2 tbs. sundried tomatoes, chopped
  • 1 tbs. chives chopped
  • ¼ tsp. garlic powder
  • ¼ tsp. fresh ground black pepper
  • ⅛ tsp. sea salt
  • 4 large thick slices of tomato, 2 per sandwich
  • 4 romaine lettuce leaves, 2 per sandwich

Gourmet B.L.T. Sandwich

I love the smokiness from the “B”acon and the freshness from the “L” and the “T”. The sundried tomato-chive spread puts the right amount of pizazz to this yummy BLT.


Sundried Tomato-Chive Spread:
In a food processor, pulse sundried tomatoes, chives, mayo, cream cheese, salt, and pepper. Puree until blended but still chunky. Set aside.

Cook the bacon on a griddle until crispy then set aside. Butter one side of each slice of bread and toast both sides on a griddle. Once lightly toasted, remove from griddle and spread a generous amount of sundried tomato-chive mixture on the buttered side of each piece of bread. Then add bacon, lettuce, and tomato slices.

To Plate:

Cut the sandwich diagonally and serve with your favorite chips or veggies.
