Ingredients

  • 2 lbs. boneless chicken thighs, cut into 1 1/2" chunks
  • 3 tbs. toasted sesame oil
  • 2 tbs. soy sauce
  • 4 tbs. sriracha sauce
  • 3 tbs. honey
  • 1 tbs. lemon
  • 1 heaping tbs. sesame seeds
  • 1/3 cup scallions or green onions, thinly sliced
  • 1/4 cup cilantro, chopped and packed in measuring cup
  • 1 tsp. salt
  • 1 tsp. garlic powder

Sesame Sriracha Chicken Bites


Wow these sesame sriracha bites are the bomb diggity! One of my favorite ways to serve this is in a bowl filled with chopped curly leaf kale, brown rice, and topped with sesame sriracha chicken and a wedge of lemon. Double the sauce and drizzle extra on top of your bowl!

Directions

In a bowl add the sriracha, sesame oil, soy sauce, honey, and lemon and mix to combine and set aside.

In a large sauté pan add 1 tablespoon toasted sesame oil and turn heat to high.  Add the chicken, season with salt and garlic powder and stir the chicken around the pan so that chicken is evenly seasoned. Stir chicken around occasionally for about 8 minutes or so, then add the sesame-sriracha sauce, fold and mix until the chicken is evenly coated and cook for an additional 2 minutes or until chicken is completely cooked. Turn heat off and sprinkle with sesame seeds, green onion, and cilantro. Enjoy!

Adriana’s Tip –

Make extra sauce! Double the sauce recipe and heat the extra sauce in a small pot, once I turn off the heat I like to add sesame seeds and then place in a serving container and set on the table. You will be happy you did! :)
